Chef Roque Martínez opened the El Jinete, a typical country bar/restaurant for locals and passersby when it was a simple roadside eatery.

Roque turned the small and dark place into one the most popular gourmet experiences around. He started with the kitchen and the menu. High-quality food with lots of presentation. The word spread that the restaurant was located between the golf clubs Mijas, La Cala, Mijas Golf and Santana Golf. Roque began by cooking for only 15 to 16 diners each night. At the end of Roque’s first month, he was cooking for 80 diners a night with just one assistant.

Roque is an expert in classic European cuisine. He learned to cook meat in the famous Shakespeare restaurant in Fuengirola, where a butcher from England supplied it. He learned that the butcher cuts the meat in Argentina the same way he did when he started his journey. Roque uses his flame to seal the inside juices, while most Argentinian grill cooks work the meat slowly. His secret is adding the perfect amount salt, and a homemade chimichurri with fresh herbs.

El Jinete is a rustic, yet elegant restaurant that offers a unique Mediterranean dining experience. The terrace overlooking the picturesque La Cala Golf Road, with its vines and palms shading it, can seat 100 people and has an Andalusian flair. It is perfect for balmy evenings after golf.
