Bruce Thery is a Belgian Chef who has been gaining popularity on the Costa del Sol. Sous chef at Cyrano, in La Cala de Mijas. When he’s at the grill, it’s all about passion and fire for the food that he serves.
Bruce was only in Spain for four years. He fell in love with Costa del Sol and the lifestyle it offers. Bruce decided to stay to make his mark.
After quitting school at 16 to study hospitality, and gaining experience at a Michelin Star restaurant in Belgium, he says that preparing food, ‘has always been my life.’
He found work in Spain at The Playwright, then The Harbour, in Marbella. Bruce eventually met Tibbi aquila, who had been working on Cyrano when she saw Bruce’s potential.
EWN: Fire is important to you I’m sure.
Bruce: I would say that fire is 80% of what inspires me.
Bruce not only helps to curate Cyrano’s menu but also mans the grill, where diners can witness his culinary skills in action.
EWN: What are the sources of your ingredients?
Bruce: We get the best there is, whether it’s beef from Ireland, ribeye from Argentina, lamb from New Zealand, tuna from Cádiz, or the prawns – I have a special guy I know from Belgium who’s best for that.
EWN: What is your favourite dish on the menu?
Bruce: That’s difficult. All of the dishes are special when you prepare them all. Perhaps the pear and date chutney with pate.
EWN: What is your driving force?
Bruce: Food is my passion. I’m passionate about what I do. Stress is also a part of life. It’s almost like anxiety. It keeps me alert.
Bruce’s passion for perfection and constant progress is a result of all those hours spent on the grill.
