Alexandre Lambert’s history is the history of fine-dining in Marbella. His fingerprints are on so many of Marbella’s best restaurants and their surroundings.

‘My story is very long. I was invited over to open Max Beach in 2003 – 2005. After, I took a break and went back to Belgium, then, in 2009 – 2010, back here. After working for Casamono for three years, I co-founded Marco Beach with some of my closest friends. Then I opened my gastronomic restaurant ‘Alexandre’. We decided to do more. I had lost my baby. Alexandre had a huge following in Marbella. People in Marbella know me but Alexandre is more popular.

‘I am a master chef of Belgian cuisine. Poached eggs are my signature. My signature dish in all of my restaurants. I am now serving this dish in my restaurant. He refuses to divulge his secret, of course. ‘My cuisine is different. It has influences from the north, the south and also something classic.

Would you describe your food as having a Belgian accent?
‘Yes, of course. I cook Belgian dishes, with influences from French cuisine and Mediterranean food. But I’m Belgian. Since I’ve been away for nine years my food is Belgian.

What Spanish ingredients are particularly tasty? I think of fish.
‘The ingredients here are good, but like other chefs here, we buy a lot of things from outside of Spain. Here everything is very seasonally. You have a different vegetable every three months. Until July, it’s white asparagus. Then green asparagus. The fish is delicious. We only use fresh fish, which we also clean ourselves. The freezer is empty. I hate freezers.’

‘We’re not cheap. This is due to the ingredients. We purchase fresh tuna and chicken breasts from Barbate. You can sample the finest ingredients directly from our menu. It is important to purchase quality. In a restaurant, the quality is your first ticket. I prefer to buy asparagus from Navarra than from Holland or Belgium.

‘It’s crazy! Sundays are my only day off from work. Then, I wait to meet clients. I am fluent in four languages.
