In a busy restaurant at the edge of Lake Balaton he started working as a teenager, constantly learning. He worked in Switzerland for a Michelin-starred hotel and a French high-end hotel chain. ‘I’ve built my own system from the places I’ve worked. How service should be performed. I teach my waiters and record videos on how to decant a bottle of wine or how to make the best wine recommendation.
‘When we open, we are ‘on air’ and forget everything else out there. Focussing, concentrating. Customer is everything.
Andrew is a key part of Figaro. He tests recipes, checks for food intolerances, and ensures that the customer gets the best service.
