Costa del Sol diners are attracted to Fuengirola’s Sollo Restaurant, which combines culinary excellence with innovative eco-friendly practices.
Sollo, a Mediterranean restaurant that has already been awarded a Michelin Star and two Repsol Suns for sustainability as well as the Michelin Green Star, has found its niche. Diego Gallegos is a Brazilian chef who has adopted Malaga as his home. The restaurant’s signature caviar, fresh ingredients and local sourcing have made it a hit.
Sollo’s Mediterranean-inspired menu features crisp lettuce, tomatoes and peppers as well as freshwater fish. Remarkably, 90 percent of its menu comes from its own sustainable resources, a testament to Gallegos’ pioneering ‘gastroaquaponics’ philosophy, a system that merges fish and vegetable cultivation, ensuring a steady supply of seasonal, high-quality produce while minimising environmental impact.
Dining at Sollo doesn’t come cheap. A full tasting menu comes at €170, but more budget-friendly options, such as caviar dishes starting at €26. The Michelin award reflects both the restaurant’s dedication to quality and its commitment to ecology.
